We are geared more towards full-time programs (as that's what there's more demand for) but EMBA programs are going to be looking for similar demonstration of leadership skills and abilities in their applications and we've had a number of people use ApplicantLab to prepare their EMBA applications!
You're going to want to approach your apps very much in the same way as for a full time MBA - the major differences are going to be that the adcoms for EMBA programs are going to expect to see MORE evidence of leadership from you (as you've had longer in your career), and your Career Vision is not likely to involve making a big switch (as most EMBAs are focused on progressing in the careers vs changing them).
Also, since you won't be taking two years "off," instead of discussing your "post-MBA" role, you'll want to talk about your goals in terms of what your plans are for DURING your program and AFTER your program (and then also what your long term objective is)
You will 100% still need to clearly articulate WHY you need the degree and why NOW is the best time for you to do so! As far as the essays, most EMBA programs ask the "typical" types of questions (Career Vision/Why MBA, Why this school, something relating to leadership).
